There are plenty of fun projects to keep yourself busy during the lockdown, but to do so you will need to keep your body fuelled. And what better way to fill up your energy levels than with a nice batch of cookies you baked yourself (with the help of an adult of course).
A delicious and easy-to-make recipe is chocolate chunk cookies. You will need:
• 120 g softened butter
• 75 g light brown sugar
• ¼ teaspoon (tsp) salt
• 75 g golden caster sugar
• 1 medium egg
• 1 teaspoon (tsp) vanilla extract
• 180 g plain flour
• ½ teaspoon (tsp) bicarbonate of soda
• 150 g dark chocolate cut into chunks
When you have all these ingredients you just have to follow the method:
1. Heat oven to 180 °C and line two baking paper sheets in a large oven pan.
2. Mix the butter and sugars together until very light and fluffy, then beat in the egg and vanilla. Once combined, stir in the flour, bicarbonate of soda, chocolate and ¼ tsp salt.
3. Scoop 10 large tablespoons of the mixture onto the tray, leaving enough space between each to allow for spreading.
4. Bake for 10 to 12 minutes or until firm at the edges, but still soft in the middle. The cookies will harden a little as they cool.
5. Leave to cool on the tray for a few minutes before eating warm, or transfer to a wire rack to cool completely.
It is as easy as that. Make sure you store the cookies in an airtight container to share and enjoy it with your family or friends.
Also, remember to wear oven gloves to prevent yourself from burning when taking the cookies out of the oven.
